Natural Wines

The Weird & The Wonderful 

Natural wine is an approach to winemaking that prioritises minimal intervention and a focus on the expression of the grapes and terroir. It emphasizes the use of organic or biodynamic farming methods, with minimal or no use of synthetic chemicals, pesticides, or herbicides in the vineyard. In the cellar, natural winemakers typically use native yeasts for fermentation, avoid the use of additives such as commercial yeast strains, sulfur dioxide, or fining agents, and limit or eliminate filtration or clarification processes. The goal is to produce wines that reflect the true characteristics of the grapes and the specific vineyard site, resulting in unique and often more vibrant, complex, and expressive flavors. Natural wines are often associated with a more hands-off, non-industrial approach, and can exhibit a range of flavors and textures, including a slight cloudiness or sediment due to minimal filtration. They are favored by those seeking authentic, artisanal, and sometimes experimental expressions of wine.

Wine Geese Wines

 

In 1691, under the Treaty of Limerick which ended the Williamite War in Ireland, the Irish Jacobite army that failed to re-establish the Catholic James II to the English throne was exiled to France. These exiles, along with their families, would be called “The Wild Geese”. Many of these would join the French foreign military service, spreading across the world. Those who settled in France, over generations, established their own traditions and specifcally in the Bordeaux region turned to making wine. Here they would be called “The Wine Geese”. The history of emigration in Ireland ha spread the Irish Diaspora to every continent. Therefore Irish people have a hand in wine making across the World. Rúibín aspires to fully appreciate the produce of Ireland in our food, hand crafted cocktails, drinks and atmosphere. As Ireland itself is not know for it’s production of wines, we have thoughtfully chosen an exciting selection of imported wines from Irish vintners abroad.
